Last night we made this delicious kale and white bean soup with spicy sausage. The golden beats were omitted because we couldn’t find them at the store. Other than that, we followed the recipe and it turned out amazing. Even better the next day. And definitely add some freshly shaved pecorino romano which brings it over the top.
The photos of the soup turned out awful. Like, really bad. So here’s a shot of our dining room mid-morning. Pretty calming, huh?

By “spicy sausage” do you mean andouille or something else? Did you use water or broth? The soup sounds good. I’m going to make it.
Just any kind of spicy chicken sausage with the casings removed. We used pre-cooked sausage because thats what we had, but I definitely think you want to cook your sausage for more flavor. As for broth, we used the Trader Joe’s low sodium chicken broth and just followed this recipe from Eat, Live Run: http://www.eatliverun.com/kale-and-white-bean-soup-with-golden-beets-and-spicy-sausage/. It’s so good! I’ll definitely make it again.
